Back with a quick and easy recipe, Pasta Salad for you and your little one. This salad requires minimal cooking, basically boiling. A winner salad at any meal time!

So, without further ado, let’s get going.

INGREDIENTS:        (4-5 servings)

Pasta (Macaroni): 1 1/2 cup (boiled)

Carrot: 1 (diced and boiled)

Peas: ½ cup (boiled)

Potato: 1 medium sized (diced and boiled)

Cucumber: 1/2 (de-seed and dice)

Apple: 1 (diced)

Mayonnaise: 3 tbsp

Cream: ½ cup

Sugar: 1 tsp

Salt: ½ tsp

Black Pepper: 1 tsp

METHOD:

Boil water with 1 tbsp. of salt. Once the water starts bubbling, add in the macaroni. Stir in a tbsp. of oil, to prevent the pasta from sticking together.  Boil until it is thoroughly cooked.  Cut potato and carrot into small dices. Boil potato, carrot and peas separately (without salt). Meanwhile remove the cucumber seeds and dice it into small cubes. Similarly cube the apples. Make sure to have all the boiled ingredients strained completely (free of water).

Mix mayonnaise, Cream, sugar, salt and black pepper in a bowl and stir well until smooth.

Once all the ingredients are boiled and ready, Mix them in a bowl. Add in the prepared mayonnaise mixture and toss well until all the ingredients are well incorporated.

It might seem watery at first, but it has to be this way. Let it sit in your fridge for about half an hour and there we go!

NOTE:

Apple should be done towards the end in order to prevent it from oxidation (turning brown). You may adjust the seasonings as per your taste. And have all the cubed ingredients same sized!
